SERVES:
4

INGREDIENTS:
4 oranges
2 grapefruit
2-3 apples
1-2 bananas

approx 1 cup walnuts, toasted
approx. 1/3 cup dried cranberries
1/3 cup orange juice, fresh or storebought (optional)

yogurt for serving

PROCEDURE:

Plan ahead and toast the walnuts in 1 - 2 tsp of vegetable oil in a pan on the stovetop and then take them out of the pan to cool.

Cut the tops and bottoms off of the oranges and use your knife to cut the skin off of the orange from top to bottom. Then cut each orange in half crosswise and cut it into bite size pieces...tossing it into a mixing bowl as you go.

Do the same thing with a lesser amount of grapefruit, removing any seeds you find as you go.

It's not necessary but you can add a little fresh squeezed orange juice, or even some ready to go store bought orange juice to the bowl and then add a handful of dried cranberries and toss those around to start absorbing some of the juice.

When it comes time to eat, cut the apples and slice the bananas and gently toss those together and then serve it up in individual bowls with an optional dollop of yogurt and the toasted walnuts right on top.

HINTS:

You can cut the citrus ahead of time and keep it cold in the fridge but you don't want to cut the apples and bananas until just before assembling the salad.
